This 100% Chardonnay is a big wine for special occasions. Supple with fresh acidity and an underlying minerality, which adds focusand length to the finish. A classy, sleek structure with subtle citrus fruit softened with textured creaminess makes it ideal for creamy dishes like risotto, rich fish and steak béarnaise. A rich nose of lemon curd and freshly baked butter biscuits. The fruity core is perfectly balanced by layers of oak spice, vanilla and roasted almonds.
Time spent in 300 litre French oak barrels adds depth to the wine. This luminous wine is ready to be enjoyed within the year of production, but will mature well for the next four to six years.
The Estate
In front of the impressive scenery of the Simonsberg and the Franschhoek Mountains, the Babylonstoren winery stretches out. Its origins date back to 1692, when Pieter van der Byl planted the first vineyards on the farm and made irrigation possible by converting the canals. Some of these old structures have survived to this day, as has the Cape Dutch architecture of the Manor House or the former cowshed where the Babel Restaurant is located, because a few years ago the new owners Koos Bekker and his wife Karen Roos restored the winery - and the historic fruit and wine farm took a turn. Today Babylonstoren is one of the best preserved Cape Dutch-style wineries.
